Grilled flowering onion

A real delight both as a starter and as an accompaniment!

Ingredients

  • 1 large white onion
  • 1/2 tablespoon olive oil
  • salt and fresh ground pepper, to taste
  • 2 tablespoons grated partially skimmed mozzarella cheese
  • 2 tablespoons grated mild cheddar cheese
  • 2 tablespoons your choice of steak sauce, hot sauce or soy sauce

Instructions

  1. Heat the BBQ to 350 degrees.
  2. Cut the onion into 6 to 8 wedges, stopping 1/2 inch from the bottom. Do not cut all the way to the bottom leaving the bottom intact.
  3. Cut out a piece of foil.
  4. Place the onion on foil and slowly open the onion, spreading the quarters apart.
  5. Drizzle with olive oil.
  6. Season with salt and pepper.
  7. Add the cheeses to the open center of the onion.
  8. Drizzle the whole onion with the sauce.
  9. Wrap tightly with foil and grill on the BBQ for 30 to 35 minutes or until onion is tender.
  10. Remove from the BBQ and slowly open the foil.
  11. Serve immediately.
